Tortilla Stack
1 can refried beans (16 oz)
1/4 cup sour cream
½ pkg. Taco mix
2 cups cooked chicken - chopped
1/4 cup green onions - finely chopped
1 can olives - chopped
2 Tbsp. Cilantro - finely chopped
1 can black beans - drained & rinsed
2 cups shredded mozzarella cheese
10 flour tortillas
vegetable oil
tomatoes - diced
-In a small bowl stir together refried beans,
sour cream and taco seasoning.
-In a larger bowl, mix together the chicken,
green onions, olives, cilantro & black beans.
-Spread 8 tortillas with the refried bean mix.
-Sprinkle the chicken mixture over the bean
layer. Then sprinkle with the grated mozzarella.
-Stack 4 tortillas on top of each other. Top
with remaining tortilla. Coat lightly with oil.
-Bake until top tortilla is golden brown - 25-30
minutes at 375*
-Garnish with tomatoes & salsa.

(I usually add more filling and less tortillas so I only have like 2 layers, topped with a tortilla. So make to your own liking.)
